Zucchini Pasta with Roasted Tomato Sauce

Fresh vegetables from your garden or farmers market taste so good, and the colours are amazing. There is something special about eating delicious food that is also beautiful.

I love using zucchini as pasta, yes it is all healthy and delicious.

A spiralizer comes in handy for this. I have a shredding tool that works fairly well, but I may have to invest in a spiralizer soon.

I also love roasting tomatoes, and peppers with some onions and garlic and herbs. This makes and excellent sauce for the zucchini pasta.

Ingredients:

olive oil

zucchini and/or summer squash spiralized

tomatoes – small ripe tomatoes work best sliced in half

multi-coloured peppers sliced

onion sliced

garlic crushed – a garlic press is another great kitchen gadget

Italian herbs – fresh preferred, but dry is okay too.

salt and pepper

crushed red chilies (optional)

parmesan cheese shaved

Preheat oven to 350, slice your fresh tomatoes in half or quarters, place them cut side up on a baking sheet (I love my stoneware pan for this.) Slice up some colourful peppers, and the onion and spread on the baking sheet with the tomatoes. Sprinkle some herbs and crush some garlic over all and drizzle with olive oil. Pop this in the oven for about 30 minutes or until soft and caramelized.

Meanwhile, spiralize your zucchini and place in a saute pan with a drizzle of olive oil, some crushed garlic, salt and pepper. Saute until tender. Toss the zucchini in a big bowl with the roasted vegetables, scraping up all the juices.

Plate it and top with some shaved parmesan. Serve with a nice green salad.
