What roast beef dinner is complete without Yorkshire pudding, smothered in gravy!

Some people like to call these popovers. This can be a big controversy depending on what country you are from. Either way they are delicious fresh out of the oven.

Yorkshire Pudding

* Important - Ingredients all need to be room temperature.

1 cup flour

½ tsp salt

½ cup milk

2 eggs

½ cup water

Preheat oven to 400

Use a muffin tin, add a small amount of oil, enough to fill the bottom of each cup, about ¼ inch. Place the muffin tin in the oven as in preheats.

Mix flour and salt together in a large bowl, make a well in the flour mixture.

In another bowl whisk together the milk, eggs and water. Pour this into the well and continue whisking until large bubbles rise to the surface.

It is important for all ingredients to be at room temperature or they will not puff.

Pour the batter carefully and evenly into the hot muffin tin, return to the oven for about 20 minutes. Do not open the oven! Reduce the heat to 350 and bake another 10 to 15 minutes.

Makes 6 large or 12 small.

Serve at once.
