Voila! Soup!

I had a craving for soup and “tis the seaon” so I haven't had time to get groceries lately so I went to my fridge, freezer and pantry.

This soup is a variation of the soups you find on line called such things as Fridge Soup or Compost Soup.

Yes I did raid my pantry, take whatever vegetables I had in my fridge, along with a good portion of leftover cooked rice, I also added some ingredients from my freezer and picked out some herbs and spices and Voila! Soup!

Ingredients:

3 carrots

3 zucchini

2 stalks of celery

1 onion

2 cloves garlic

1 can of diced tomatoes

1 carton of chicken broth

1 package frozen spinach

1 package frozen ground turkey

2 or more cups of cooked rice (I used a yummy rice blend here.)

Seasonings I used poultry seasoning for that comfort food taste, and a sprinkling of red chilies for a bit of heat.

Method:

Chop and saute the first 5 vegetables in a bit of oil, as they cook and brown up a bit, add seasonings.

Add the broth, canned tomatoes and frozen spinach and bring to a simmer.

Brown the ground turkey breaking into small pieces.

Add turkey to the soup and continue to simmer on low, stirring occasionally, until everything is steaming hot, and all the flavours are well combined.

Add the cooked rice just before serving.

I ladled myself a bowl for supper and then put the rest in the fridge.

I took a bowl to work for lunch the next day and this soup was even better than the night before and bonus, it has bought me some time before I have to get groceries, and will be in the freezer for a couple of future lunches too.
