I am hoping this recipe will get you in the Christmas baking mindset. Yep, I said it, Christmas! These are easy and quick to make, so treat your family now, experiment with a few topping options, pick your favourite or two, and make some more to freeze for Christmas.

Cracker Candy with Chocolate & Trail Mix Topping

Time: About 10 minutes to prepare and 2 hours to chill.

Using basic ingredients you most likely have in your pantry, this toffee chocolate candy can be the base for a variety of toppings. Use your imagination and taste buds as your guide. I used chopped up trail mix for this batch. You can even use crushed candy canes for the Christmas touch. Just know that it is quick, delicious and easy to make, so the length of time it takes to make it will probably equal the time it takes for your family to devour it!

Ingredients:

40 salted top crackers, or as many as you need to line a baking sheet.

¾ cup butter

1 cup brown sugar

2 cups chocolate chips

1 cup chopped nuts

Preparation

Preheat oven to 350 degrees.

Line cookie sheet with foil & spray with non-stick cooking spray.

Lay crackers in single layer on baking tray.

In a saucepan, melt butter, once melted, add brown sugar and turn heat to medium. Boil for 3 minutes stirring constantly.

Pour over crackers and spread evenly.

Bake for 5 minutes until bubbly, remove from oven and pour chocolate chips over top, once melted, spread chocolate evenly.

Top with chopped trail mix (or topping of your choice) and let tray cool in the refrigerator for approximately 2 hours, or until candy is chilled.

Break into pieces and store for up to 3 days in the fridge or up to 3 months in the freezer.
