Very Fluffy Pancakes

My niece Rachel, the busy Mom I have mentioned before with the adorable twins, has shared another recipe and just in time for you to host your own Stampede breakfast.

Here is what Rachel has to say about this recipe:

I also like to put some batter aside after I have made it and add food colouring, the kids love coloured pancakes and make special requests for certain colours, I have made green, purple, blue, pink, etc...quite fun :-) These are a huge hit!

I usually double the recipe and freeze the remaining pancakes, take them out pop them in the toaster and voila! Fresh pancakes that are home made!

Here is the recipe not doubled...

3/4 cup milk

2 Tbsp white vinegar

1 cup flour

2 Tbsp white sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 egg

2 Tbsp butter melted

Add white vinegar to milk and put aside.

Add all dry ingredients.

Add egg and melted butter to milk mixture the pour into dry ingredients. Mix so there are no lumps and pour onto hot griddle.

Add any delicious toppings of your choosing, my favourite instead of maple syrup is honey butter, equal parts creamed honey and butter melted and drizzled on top! mmm mmm mmm
