Another Foodie Friday submission from The Erratic Cook, a chef in her own mind from right here in Okotoks.

Super Size Me S’mores!

This is a very simple food item, but one that is sure to please.

After the most perfect fire pit night ever, I decided I had to share our s’more experience.

The ingredient list is short and oh so sweet!

One bag of size WOW marshmallows.

Two boxes of cookies with chocolate tops. To cover all chocolate basis get one milk chocolate, and one dark chocolate.

see photo – we used President’s Choice Concerto chocolate topped all-butter biscuits, but other brands make these yummy cookies too.

The picture on the marshmallow bag is a little cannibalistic don’t you think?

You will need an assortment of roasting sticks, the perfect fire and a reponsible and eager child to roast your marshmallow, it’s a nice addition to the process, but you may have to roast your own. Then sandwich that toasty marshmallow between two cookies (chocolate side in) and voila! yummy s’more. Sound simple right?

Now please enjoy the photo of the ingredients because once the fire was ready, the bag was opened, roasting sticks at the ready and the s’more frenzy began, everyone's fingers were too sticky to touch the camera. Believe me your imagination can take off now. So the size WOW super sized marshmallows seemed like a good idea at the time, but they really overwhelmed the cookies, and our hands, faces, clothes…so we went back to regular sized marshmallows for s’mores. What we did find out was if you are an expert marshmallow roaster those big ones are excellent for multi roasting, you know, peel the first layer of that crunchy browned shell and put the insides back over the fire, but be careful they are so big they can sag & that luscious gooey perfectly browned orb will end up in the ashes. Did it happen to me? Maybe. Just saying.

Ah! summer

Til next time
