My niece Rachel is a mother of adorable and active twins. So needless to say she relies on tried and true recipes that are kid friendly. I love banana bread and if she has been using it since grade 8, then this will now be my go to recipe too.

This truly is the BEST banana bread recipe I have ever tried, the outside is always crispy and the inside is super moist out of the oven. If any is left over for the following days, my favourite way to have it is slightly toasted with a bit of butter...mmm...mmm...my kids go crazy for it.

This recipe has been carried with me since Grade 8 Home Economics, so just over 25 years, and I have had many people ask for copies as it is so tasty. I usually double the recipe so it makes two, I then slice up the second one and freeze, then take out pieces on an as needed basis. Here is the recipe!

Rachel's Best Ever Banana Bread

1/2 cup of unsalted or salted butter

1 cup sugar

2 eggs

1 tsp baking soda

1 & 1/2 cup of flour

1 ripe banana sliced

1/4 cup of milk

Preheat oven to 350

Add all the ingredients together in a mixing bowl and blend with hand blender or electric mixer until thoroughly combined.

Grease the bread loaf tin, pour the mixture in the pan and bake for 1 hour and 10 minutes.

Cool on wire rack and enjoy!
