My sister Marlena came for a visit and she made this salad. It is so good! She has made it before and I have always been meaning to get the recipe, this time, I did! So, here you go, you will love it, and you are most welcome!

Kale Orange Salad

2 cups baby kale

1 cup arugula

2 oranges

1/2 small red onion

1/4 cup dried cranberries

1/4 cup pumpkin seeds

1/3 cup crumbled feta cheese

1/4 cup olive oil

Place kale and arugula into a salad bowl. Add more greens as desired. Cut oranges in half. Keep 1/2 orange aside for dressing. Peel and cut remaining oranges into 1” chunks. Slice red onion into thin rings. Add to salad along with cranberries, pumpkin seeds, and feta. Juice the 1/2 orange and mix with olive oil. Season with salt and pepper. Pour over salad and toss to coat. Allow to marinade 1/2 hour at room temperatures before serving.

Tips and tricks for this salad:

If you use regular kale, just chop into ribbons.

I enjoy picking up flavoured oils and use them in many salad dressings. I have used blood orange flavoured and other citrus and herb flavours in this one. Let your imagination and taste buds guide you.

If by chance you have some of this salad left over, it is one of the few dressed salads that keeps. Just add a few more greens and yum.
