A friend of mine went on vacation and said the magic words “While I am gone help yourself to my raspberries.”

Oh my! Yes please and thank you! Raspberries are my favourite!

I proceeded with the picking and came away with enough to freeze and make several delicious concoctions, including this one.

Berry Bread Pudding

Ingredients:

Half large loaf french bread, or bread of your choice

1 1/2 cups low fat milk

1/2 cup granulated sugar or less

2 tsp vanilla

1/2 tsp nutmeg and cinnamon

1 cup strawberries

1 cup raspberries

2 eggs beaten

1 tbsp butter

Instructions:

Preheat oven to 350 degrees.

Tear bread into small pieces, enough to make 6 cups. In another bowl combine milk, sugar, vanilla. nutmeg, cinnamon and beaten eggs. Stir in bread and let stand for about 10 minutes. Gently stir in berries. (I used all raspberries this time, I also added some chocolate chips...just sayin)

Meanwhile spread or melt butter in an 8 inch baking dish, Pour in bread and berry mixture and bake 40 minutes at 350 or until puffed and brown.

Serve warm with vanilla yogourt or ice cream, and top with more fresh berries.

I originally found this recipe in Lighthearted Everyday Cooking by Anne Lindsay and have made it many times with many different combinations of fruit.
