Another Foodie Friday submission from The Erratic Cook, a chef in her own mind from right here in Okotoks.

Greek Salad

What you need:

Tomatoes 2 or more

Cucumber 1 long english

Peppers 2 or more

Red Onion 1/4 or more to your taste

Kalamata Olives or my personal favorite sun dried black olives

Feta cheese; I like lots

Olive oil; 1 tablespoon

Lemon juice; 1 tablespoon

Dried oregano; generous amount

Salt and pepper to taste

What you do:

Chop up the tomatoes and cucumbers first and put them in a bowl.

Add a tablespoon of each olive oil and lemon juice, more or less, and a sprinkling of salt.

Let this mixture sit while you chop up the rest of the ingredients. As the tomato and cucumber sit they create more juices therefore requiring less oil. Smart hey?!

Now toss in the rest of the ingredients and enjoy.

Approx 4 servings.

The amounts of each is up to your personal taste buds.
